Garden Goodies


I picked some more veggies from our garden today - a few beans, two cucumbers and some tomatoes. By the end of the week we will have at least half a dozen zucchini, a few yellow squash, and half a dozen, or more, good-sized tomatoes ready for picking. I have some basil ready to be picked as well. I just have to figure out what to do with it - there's really not enough for pesto sauce. I think I'll slice up one of the cucumbers I picked today and have it with some ranch dressing tomorrow.
We have been using up our zucchini well. Three out of four nights this week we have had zucchini in some fashion. Sunday it was in Layered Summer Vegetables. Tuesday we had Crispy Zucchini Coins and leftover Layered Summer Vegetables. Tonight we are having Zucchini Parmesan Casserole. We'll see how the rest of the week pans out. I'd like to make another batch of
Zucchini Pineapple Muffins or some Zucchini Bread. I like to pick our zucchini and yellow squash when they are small. They are easier to prepare that way & you don't get a hard thick skin on them (less seeds too).

Evan has a new way of communication. He blows raspberries. He'll do it when he's happy or when he's sad. It's funny to hear the noise and look over at him and he'll be playing with his toes, which is what he was doing when I snapped this picture of him today.
